Qualified Chef - Broome Western Australia
The Chef plays an incredibly important role and is one of the key figures on board. Candidates for the Chef role should have fine dining experience and be able to assist with all aspects of galley management. An ability to provide superb attention to detail and the highest level of customer service. Also, an ability to live and work in a small ship environment.
Onboard True North, it is the Chef’s responsibility to provide all meals to both guests and crew. The typical work day will be long – not only does this job entail purchasing stores and cooking, but it also involves enormous amounts of preparation and clean-up to ensure that the galley is kept in pristine condition.
The Chef is to be inventive and create balanced menus with sometimes scarce supplies. Special menus and varied dietary requests are not uncommon.
The Chef is also responsible for the following:
- Provisioning of all food items
- Ordering and liaising with suppliers
- Food safety and storage standards
- Adhering to budget
- Galley and food inventory
- Galley safety and sanitary standards
- Management of other galley staff
Seagoing positions are offered to candidates with the following qualifications:
- Senior First Aid
- Responsible Service of Alcohol
- Certificate of Safety Training (STCW)
- AMSA Medical
- Passenger Vessel Safety (Crowd Management)
- Complete Chef Apprenticeship or Certificate III of Cookery
- Certificate of Competency for seafaring cooks (AMSA approved)
- Must meet Covid vaccination requirements
