While Silky Oaks Lodge is transforming into the new-look luxury lodge, Executive Chef Mark Godbeer and his team in the kitchen have been busy preparing the luscious new menu, inspired by the surrounding Daintree rainforest. A trove of fruits, chocolate, coffee, nuts, meats and seafood has been sourced from local producers and biodynamic farmers within a tight radius of Silky Oaks and a new kitchen garden is sprouting edible tropical ingredients for the Treehouse Restaurant. Chef Mark has a keen knowledge on native ingredients, using bush foods used by the Indigenous Kuku Yalanji people paired with proteins such as Daintree barramundi, kangaroo and coral trout.

On the contemporary Australian menu is red claw sour curry with Malaysian lime and char siu pork belly wonton soup with chilli, bitter melon and prawn oil – a nod to Tropical North Queensland’s diverse multicultural influence. From reopening the new evening dinner format will alternate between a la carte and family style platters, made for sharing. To top it all off, for dessert there’s a coconut mousse with persimmon, lemon verbena and chocolate.

All this sumptuous fare is matched with premium Australian wines and we’re salivating in anticipation! 

The Baillie Lodges’ Culinary Philosophy of delivering a real ‘sense of place’ for guests, is essential to the dining experience at Silky Oaks Lodge. Surrounded by ancient fig and mango trees, the dining experience is set amongst the leafy rainforest canopy under the shade of a soaring skillion roofline above the Mossman River. Guests can enjoy a sunset drink – spoilt for choice with a a swagger of locally crafted beers, wines and a menu of locally produced small batch spirits including the delicious Baillies 9 gin. From reopening, rates at Silky Oaks Lodge will include evening sunset drinks, matched wines with dinner and a select in-suite bar.

The new-look member of Luxury lodges of Australia is set to reopen on December 15, 2021 and will feature a reimagined main lodge, six stunning treehouse-style suite categories, inclusive rates and immersive guest experiences connecting people to Tropical North Queensland.
