Southern Ocean Lodge on Kangaroo Island sources sustainable barramundi, fresh hydroponic herbs and salad greens from the nearby Parndana Campus, where high-school students run a ground-breaking ‘aquaponics’ program as part of the agriculture syllabus.
Students have established a barramundi farm in a purpose-built shed on the school grounds. The clever system sees waste water from the farm filtered via pipes feed hydroponically grown herbs and salad greens before cycling back to the barramundi tanks. Excess water flows to paddocks where horticulture students tend sheep and a vegetable patch.
As the school’s largest customer, the lodge’s kitchen team has formed a close working relationship with the school, ordering the sustainably produced barramundi and making special requests for herbs. The fish and fresh greens feature regularly on the menu, much to the delight of guests!
