#keepingitlocal at Lake House Daylesford…Tim and Deri-Anne Wyatt are first generation farmers, now in their 10th year of working seven acres of leased land in the tiny hamlet of Glenlyon, 10 minutes down the road from Lake House.  “We aim to put back as much as we draw out of the earth and community and hope to leave both richer than we found them.” Tim Wyatt, Angelica Organics.

“This dish is a celebration of the humble carrot, often relegated to the making of stocks and not much else. When you can get local organic carrots full of juice and only hours out of the ground as we do, they are a revelation.
