Two Luxury Lodges of Australia members feature in The Herald Sun Delicious’ guide by Kyrsia Bonkowski re the best new Australian hotels and resorts for food lovers in 2027.

Bullo River Station in the East Kimberley returns in May 2027 after a major transformation of its guest wing and homestead, bringing its celebrated station hospitality and home-style cooking to a refreshed setting on a working cattle station.

“No-one does wild luxury quite like the Territory, and one of its top lodges is about to set a new standard. Bullo River Station sits on a 400,000-acre working cattle station, and reopens next dry season after a transformation by cult interior stylist Sibella Court. The 12 rooms will almost double in size, and are being cleverly updated to better embrace the dramatic East Kimberly landscape outside; while an open kitchen forms the heart of the homestead, around which adventures are planned. The all-inclusive dining draws from the kitchen garden as well as quintessential territory ingredients such as just-hauled-in barramundi.”

On Tasmania’s east coast, Saffire Freycinet welcomes guests to its new private luxury villa, Saffire Jewel, an even more intimate way to enjoy the lodge’s fine dining built on the best of local produce and wine, with Great Oyster Bay and the Hazards as a backdrop.

“Gather your most discerning friends: one of Tasmania’s most discreet lodges has added a group villa. Three-bedroom private retreat Saffire Jewel opens at Saffire Freycinet in December, offering splendid solitude, as well as access to the resort’s facilities – including the world-class dining, served up with against the pink-tinged backdrop of the The Hazards mountain range. Of course if you’d rather keep your party exclusive, the self-contained villa comes complete with private chef and a dedicated private wine cellar.”
