Australia’s Leading Ultra-Luxury Retreat Re-Opens Late October with an Exciting New Culinary Experience  

Emirates One&Only Wolgan Valley, Australia’s iconic ultra-luxury resort located in the Blue Mountains, announced a new partnership with Australian culinary stars, The Bentley Group.

Bentley co-owners Brent Savage and Nick Hildebrandt have been working closely with the team at Emirates One&Only Wolgan Valley to introduce a new food and wine experience at the resort. Brent has taken on the role as Creative Director, Food and Nick the mantle of Creative Director, Beverage. Guests will have the chance to discover the new Wolgan by Bentley menus when the resort re-opens late October 2021. 

“We are excited to have talents of the calibre of Brent Savage, Nick Hildebrandt and their Team join forces with Emirates One&Only Wolgan Valley to introduce  our guests to a new gastronomic experience here at the resort,” commented Tim Stanhope, General Manager, Emirates One&Only Wolgan Valley.

“One&Only and The Bentley Group have  successfully collaborated on previous ventures both here in Wolgan Valley and in The Maldives, where Brent and Nick launched  Botanica restaurant at One&Only Reethi Rah. This is a natural evolution of the partnership, and we are thrilled to have them on board.”

One of Australia’s most respected and influential chefs, Brent has a reputation for exciting, cutting-edge food, clever technique and a unique mastery of flavour and texture. Brent has twice been awarded the Good Food Guide Chef of the Year (2005 and 2015) and has published a cookbook, Bentley: Contemporary Cuisine. Nick Hildebrandt is arguably Australia’s most influential sommelier and one of the country’s leading restaurateurs. Nick’s hospitality career spans more than 25 years and he has won multiple industry awards, including Sommelier of   the Year in Gourmet Traveller Australian Restaurant Guide (2007 and 2015) and Sommelier of the Year in The Sydney Morning Herald Good Food Guide in 2008. Brent and Nick are the co-owners of The Bentley Group, and together they run award-winning Sydney venues Bentley Restaurant & Bar, Monopole, Yellow, Cirrus and Ria.
