We are looking for a Chef to join the Wild Bush Luxury team at Bamurru Plains from April 2019.
Role of the Position:
To connect guests to the country through food experiences that combine native and local produce, quality standards and dining theatre in a style that is uniquely Wild Bush Luxury.
Key Responsibilities:
- To design a food offering to fit Bamurru’s environment so that guests have a distinctly Australian bush culinary experience.
- To deliver a standard of cuisine that goes above and beyond guest expectations
- To manage the kitchen so that health and hygiene standards are met
- To manage the sourcing of food so that agreed budgets are met
- To provide an informal yet focussed (Wild Bush Luxury) style of service so that guests feel at home in a remote bush location
- To provide wholesome dinners for staff
Key Activities:
- Provision of dinners for staff on site
- Working with fellow chef in management of the kitchen
- Design of seasonal menu cycles for the fishing and leisure seasons
- Providing direction for kitchen-assisting staff
- Design of kitchen rosters
- Establishing links with local food producers and suppliers
- Generating ideas for the development of Bamurru’s cuisine and style of dining experience
- Measuring and managing the sourcing of local produce
- Providing refreshments for guided activities on property
- Management of food stock to ensure standards and budgets optimised
- Assisting, where necessary, with other lodge duties
- Meeting and greeting guests as and when needed
- Bringing own style of theatre to food at Bamurru in both the lodge and in the bush
- Liaison with Lodge Manager for support staff at meals
- Engage with guests on meal design at dinners
