The Role

We have an exciting new opportunity at Spicers Peak Lodge for a full time Chef de Partie to join the team. You will be an integral part of delivering our dining experience to our guests, whether it be for a conference, leisure group or for our dining offering.

About The Peak Restaurant

Perched atop a mountain on 8,000 acres in Queensland high country and just 90 minutes drive from Brisbane CBD, Spicers Peak Lodge offers an exclusive, intimate Australian wilderness lodge experience. The Lodge sits 1,100 metres above sea level with views across to the surrounding peaks. From untouched rainforest and rugged mountain escarpments to the pristine backdrop of World Heritage Listed national park and ancient volcanic regions, there is no shortage of unspoiled wilderness to experience and admire.

With such a uniquely Australian setting it’s only fitting that our restaurant, The Peak, is an exceptional dining experience. With a menu offering only the very best of Australian produce sourced as locally as possible, this is truly dining at the height of luxury.

The role and key duties

  • Curating an unforgettable and personalised experience for our guests from start to finish;
  • Deliver our in-house dining menu inspired by local ingredients, prepared utilising creative preparation techniques;
  • Successfully run your own section during service as directed by the Head Chef;
  • Lead by example to ensure the overall guest experience exceeds expectations;
  • Deliver all food experiences for the property including: restaurant dining; functions, weddings, events and experiential dining opportunities;
  • Work closely with other Chefs to ensure the overall success of your team and the retreat.

Essential criteria required to be considered

  • Chef trade qualification (essential);
  • Previous experience as a Chef De Partie in a high end, fine dining or hatted environment (essential);
  • Prepare, cook, and present dishes to the highest standards;
  • Ability to work across all sections of the kitchen and run your own section;
  • Contribute to a positive and motivated kitchen atmosphere, and have a genuine passion for people, food and wine;
  • Maintain a clean and organised kitchen, adhering to food safety and hygiene standards;
  • Ability and willingness to commence work on a rotating roster including weekends and public holidays;
  • Reliable vehicle to get to and from the retreat;
  • Be located close to our retreat or be willing to relocate.

Spicers Peak Lodge is seeking it's next General Manager! 

As the General Manager of Spicers Peak Lodge, you will be a hands-on host who delights in providing guests with bespoke experiences. Reporting to the Regional General Manager, you will be responsible for the overall management of the property; developing and implementing business strategy; and delivering budgeted growth, revenue and profit targets.

  • Ensure every guest experience exceeds expectations by introducing innovative tourism opportunities and maintaining luxury brand standards.
  • Inspire, mentor, and grow current and future leaders to foster a culture of excellence and professional development.
  • Provide hands-on leadership across both hotels, refining and implementing operational standards while safeguarding physical assets.
  • Manage budgets, control costs, and deliver incremental revenue. Analyse performance, identify growth opportunities, and drive profitability across all market segments.
  • Ensure alignment with SBH’s strategic goals, values, and brand standards while advocating for change and innovation.
  • Build strong local partnerships and champion marketing initiatives to strengthen brand awareness and community engagement.

Essential criteria required to be considered; 

  • Minimum of 3 -5 years experience in a General Manager position from within a luxury lodge or luxury boutique brand;
  • Strong experience in food & beverage, preferably high end, hatted or fine dining;
  • A high level of business acumen; Strong understanding of COGS, business expenses and managing P&L's;
  • You must understand how to operate and market your own business and maximize revenue across all departments;
  • Have the passion, energy and enthusiasm along with proven ability to lead and motivate a dedicated and culturally diverse team;
  • Excellent communication skills, a professional and friendly demeanour;
  • Willingness to tackle every aspect of the business with a hands-on approach and a positive attitude.

Assistant Lodge Manager | Kangaroo Island, SA

 

About the Role

Southern Ocean Lodge is seeking an Assistant Lodge Manager to support the General Manager in the day to day leadership of one of Australia's most celebrated luxury wilderness lodges.

 

This is a hands on leadership role across all guest facing operations. You will lead from the floor, guiding the team through service, hosting guests, and stepping in wherever needed to keep the lodge running seamlessly. You will also take responsibility for the property in the General Manager's absence alongside the other Assistant Lodge Manager.

 

This is a residential role based on Kangaroo Island, with accommodation and meals provided.

 

Key responsibilities include:

  • Supporting the General Manager across all lodge operations
  • Leading the guest experience, front office, food and beverage and housekeeping teams
  • Acting as Manager on Duty and taking full responsibility for the lodge as required
  • Hosting guests and building genuine connections throughout their stay
  • Driving service standards, presentation and attention to detail across the property
  • Supporting recruitment, onboarding, training and performance of the team
  • Managing rosters, labour costs and operational budgets
  • Overseeing workplace health and safety, compliance and emergency procedures
  • Working closely with the wider Beckons team on projects and reporting

 

About You

You are a passionate and experienced hospitality leader who enjoys being visible, hands on and involved in every part of lodge life. You lead calmly, care deeply about your team, and understand what exceptional service looks like in a luxury setting.

 

You will ideally have:

  • Experience in an Assistant Manager, Operations Manager or senior departmental leadership role
  • A background in luxury or 5 star accommodation, ideally a remote or lodge environment
  • Strong leadership skills with a genuine interest in developing people
  • Confidence across multiple departments, including front office and food and beverage
  • Excellent communication, problem solving and organisational skills
  • A current driver's licence
  • Willingness to live and work on Kangaroo Island in a residential setting
  • Ability to work a rotating roster, including weekends and public holidays
  • Current Australian working rights

Duty Manager | Kangaroo Island, SA

 

About the Role

Southern Ocean Lodge is seeking a Duty Manager to support the day-to-day operations of the lodge and ensure a seamless, high-quality guest experience.

 

In this hands-on role, you will oversee daily operations across departments, supporting the team and stepping in where needed to maintain exceptional service standards. You will play a key role in creating a warm, personalised guest experience while ensuring the smooth running of the lodge.

 

Key responsibilities include:

  • Overseeing daily lodge operations across all departments
  • Supporting and leading the team to deliver exceptional guest service
  • Acting as a key point of contact for guest enquiries and requests
  • Ensuring service standards and presentation are consistently maintained
  • Assisting with team coordination and shift supervision
  • Handling guest feedback and resolving issues professionally
  • Supporting operational needs across front office, housekeeping and F&B

 

About You

You are an experienced hospitality professional with strong leadership skills and a passion for guest experience. You are adaptable, organised and enjoy working across multiple areas of a lodge environment.

 

You will ideally have:

  • Previous experience in a supervisory or duty manager role
  • Strong leadership and team coordination skills
  • A passion for guest service and attention to detail

  • Provide a high level of personalised guest service & offer a relaxing experience;
  • Provide recommendations and upsell retail products to guests;
  • Keep the spa operations running smoothly & clean all areas of the spa after use.

Essential Criteria required to be considered

  • Certificate IV in Beauty Therapy or higher (essential);
  • Minimum 1-2 years' experience as a massage therapist (essential) 
  • Strong knowledge of wellbeing, skin and wellness products with ability to guide and educate our guests;
  • A warm, professional, and guest-focused approach;
  • Ability and willingness to commence work on a rotating roster including weekends and public holidays;
  • Reliable transport to get to and from the retreat;
  • Be located close to our retreat or be willing to relocate.
