FOOD & BEVERAGE SUPERVISOR - THE LOUISE - BAROSSA VALLEY

The Role

  • Run services in Appellation Restaurant, ensuring the highest standards of guest experience.
  • Prepare the restaurant for service and work closely with the Food and Beverage Manager in the daily operation of the department.

SOUS CHEF - SILKY OAKS LODGE - DAINTREE RAINFOREST

 

Dining at Silky Oaks Lodge is an immersive culinary experience inspired by the ancient rainforest of the Daintree and the exceptional produce of Tropical North Queensland. With a strong paddock-to-plate philosophy, our menus evolve with the seasons, celebrating locally sourced ingredients through refined yet approachable cuisine.

 

We have an exciting opportunity for a Sous Chef to join the Silky Oaks Lodge team in this truly unique destination.

 

The Role:

  • Collaborate with the Executive Chef to plan and execute seasonal menus with precision, efficiency and consistency
  • Lead daily kitchen operations, following prep lists and ensuring service runs smoothly at all times
  • Maintain exceptional food quality while accommodating all dietary and cultural requirements
  • Manage stock control, ordering and supplier relationships to meet par levels, budgets and operational needs
  • Uphold the highest standards of food safety, hygiene and workplace cleanliness in line with legislation and lodge procedures
  • Ensure safe kitchen practices at all times, including correct use of equipment, chemicals and PPE
  • Support, train and lead the kitchen team, fostering a positive culture, strong performance and ongoing development

 

What we’re looking for:

  • Demonstrated experience at Sous Chef level within a high-volume, fine-dining restaurant (luxury lodge experience highly regarded)
  • Strong purchasing, stock control and operational kitchen management skills

The Role

This senior leadership position will see you:

  • Manager and coordinate all guest relations operations
  • Creating and curating the ultimate guest experiences
  • Ensuring the small Guest Service team have the available resources and training to deliver great service, through effective communication, handovers and briefing meetings
  • Planning and assigning work through effective rostering management and controlling labour costs according to budget

You will also work closely with department leaders to support and assist them across all day-to-day operational issues. Your day will be spent welcoming guests on arrival, managing all Guest Services and driving a positive team culture to enhance the guest experience and deliver business goals.

 

We are looking for a passionate and energetic hospitality professional who can effortlessly move between strategic management as well as being a hands-on leader who can support the small team in daily operations.

The Role

This year-round key leadership position will lead the Maintenance team in planning and executing all preventative maintenance, trouble-shooting breakages and general repairs across the property. You will work closely with the General Manager to plan and execute all maintenance works and capital expenditure projects.

With demonstrated experience in a similar role, you will have experience maintaining a wide range of plant and equipment including air conditioning and electrical works. You’ll have great time management with the ability to prioritise multiple projects as well as a strong safety focus, actively participating and supporting safety initiatives.

  • Extensive experience in maintenance in the hotel/resort industry

  • At least 3 years housekeeping experience in a 4–5-star luxury hotel or resort, with proven leadership capability  
  • Demonstrated ability to manage rosters, set team priorities, and support staff through regular feedback and development  
  • Confidence managing budgets and maintaining strong cost control measures  
  • Experience using property management systems, along with solid proficiency across MS Office  
  • A strong understanding of safe WHS practices and a commitment to maintaining a safe working environment  
  • A proven ability to uphold exceptional cleanliness and hygiene standards, with outstanding attention to detail  
  • Highly developed organisation, administration, time management and planning skills, with the ability to stay ahead in a fast-paced environment

What can you expect in a day in this role?  

In the daylight hours, you’ll work alongside our guiding team, preparing for guest experiences, hosting selected activities, and helping create exceptional moments.  You might be sharing local wildlife knowledge, supporting coastal walks, or simply offering warm, thoughtful hospitality to our guests. 

As evening approaches, your focus shifts to the skies. You’ll perform pre-tour checks, ensure the observatories are pristine, prepare equipment, and review the night’s conditions. Once guests arrive, you’ll guide them through our astronomy experience, sharing stories of the cosmos, explaining celestial features in an accessible way, and highlighting the importance of preserving our dark skies. 

 

 

What you’ll bring:  

  • Strong knowledge of and a genuine passion for astronomy 
  • Excellence in customer service, with confidence in a guest facing environment 
  • Confident public speaking skills and the ability to engage guests of all ages 
  • A university degree in astronomy or a related field (advantageous but not essential)  
  • Previous tour guiding experience (advantageous but not essential) 
  • A Tasmanian Medium Rigid driver’s licence and Passenger Transport (PPV) accreditation – or a willingness to obtain them (we’re happy to assist the right candidate).  
  • A current First Aid Certificate – or willingness to obtain one 

 

This role requires someone who can commit for 12 months or longer, becoming a steady part of our guiding team throughout the year. During our busiest periods, summer and the peak Dark Sky season in winter, you’ll be expected to remain on‑site to support guest experiences when demand is highest. 

You’ll typically work five days per week, with 38+ hours during peak periods. Shifts span afternoons, evenings, weekdays, and weekends, reflecting the natural rhythm of both daylight adventures and night‑sky experiences.

EXPERIENCES GUIDE - SOUTHERN OCEAN LODGE - KANGAROO ISLAND

The Role:

Your office is the outdoors, and you enjoy bringing people together to explore some of Australia’s most beautiful unspoilt wilderness. Where your day is spent being a true host to our guests, delivering high-quality tours for all guests.

You’ll have extensive knowledge of Australian animals and plants, ideally those that are endemic to Kangaroo Island. Additionally, your understanding of local history and indigenous culture will provide a balanced, educational experience for our guests.

You will have…

  • Proven experience as a naturalist guide
  • Extensive knowledge of native flora, fauna and ecology, and the ability to provide relevant information and interpretation to guests

  • The ability to work across flexible rosters including weekdays, weekends, public holidays, and school holidays

This is a full-time role inclusive of accommodation, meals and utilities as provided in our onsite staff village.
