About the role

As a Food & Beverage Supervisor, you’ll play a key role in delivering remarkable dining experiences, with seasonal menus showcasing Tasmania’s finest produce. Guests enjoy local seafood, cool-climate wines and artisan ingredients across Palate Restaurant, the Lounge, or within the privacy of their suite.

This role is ideal for someone looking to take the next step and establish themselves within a high-performing luxury environment, with the opportunity to grow into future leadership roles.

You will:

  • Lead by example in delivering warm, personalised service aligned with Saffire’s luxury standards
  • Support the Food & Beverage Manager in the day-to-day operations of the restaurant and bar
  • Build authentic connections with guests and create memorable, tailored experiences
  • Work closely with the Executive Chef and kitchen team to deliver exceptional food and wine pairings
  • Mentor, train and develop team members, fostering a strong and stable team culture
  • Contribute to recruitment, onboarding and capability-building across the team
  • Take ownership of service standards, ensuring consistency, quality and attention to detail
  • Support ordering, stock control and inventory management
  • Collaborate across departments to ensure a seamless guest experience

Restaurant Manager | Kangaroo Island, SA

About the Role

Southern Ocean Lodge is seeking a Restaurant Manager to lead our Food & Beverage team and deliver an exceptional dining experience in one of Australia’s most celebrated luxury lodge settings.

In this role, you will oversee daily restaurant operations, guiding guests through a relaxed yet refined dining experience while ensuring the highest standards of service, presentation and attention to detail. You will work closely with the kitchen and leadership team to create a seamless and memorable guest journey.

Key responsibilities include:

  • Leading and developing the Food & Beverage team
  • Delivering a high-quality, personalised dining experience
  • Managing restaurant operations, including rostering and service flow
  • Maintaining exceptional service and presentation standards
  • Monitoring labour and operational costs
  • Collaborating with the kitchen team to ensure seamless service

About You

What can you expect from a day in this role? 

This is a high-impact individual contributor role with both personal revenue accountability and contribution to broader sales targets. The Sales Manager – Travel Trade (Luxury) will cultivate and convert demand for Federal Hospitality’s luxury and experience-led portfolio through strategic relationships. The role will have a dedicated focus on Saffire Freycinet, with the responsibility to cross-sell MACq 01 and The Henry Jones Art Hotel.

  • Strategic Sales & Revenue Generation:  You'll be responsible for developing and executing targeted sales strategies across assigned markets to drive revenue through high-value transient leisure and luxury distribution channels. You’ll actively manage pipelines, forecasting and conversion performance to deliver both individual and broader revenue targets, while optimising commercial outcomes through rate and length of stay etc.
  • Luxury Trade & Partner Management: You’ll enjoy responsibility for building and nurturing strong relationships across the luxury travel ecosystem, including luxury travel advisors, independent consultants, DMCs, international tour operators, wholesale partners and luxury consortia. You can expect to be representing Saffire within Luxury Lodges of Australia and broader partner networks, while maintaining deep engagement with overseas representatives and strategic partners to strengthen market presence and drive commercial opportunity.
  • Market Development & Account Growth:  You will confidently identify new business opportunities across global luxury markets and monitor competitor landscape and emerging trends within the luxury travel sector.
  • Brand Representation & Storytelling:  Acting as a custodian of the Saffire brand, translating its ethos and experience into compelling market narratives, you’ll enjoy delivering impactful presentations, training, and client engagements.
  • Travel & Representation: Given the nature of the role you’ll be able to undertake travel to deliver international and domestic sales missions; trade events, roadshows, and luxury showcases, client meetings and relationship-building activities.

 

How will you contribute to the continued evolution of the Saffire experience? 

 Your extensive experience working in the luxury tourism industry will enable you to build and extend relationships as you work as an ambassador for Saffire. You’ll also bring the following:

  • Proven experience in luxury hospitality or travel sales
  • Established network within luxury travel advisor and consortia landscape
  • Demonstrated ability to drive high-yield revenue outcomes
  • Exceptionally organised, with an eye for the finer details
  • A storyteller who brings experiences to life with authenticity and passion
  • Passionate about business development and building meaningful lasting partnerships
  • Experience with CRM or event software experience is a plus and able to complete administration requirements that go along with securing business.
