RESTAURANT MANAGER – qualia, Hamilton Island

Hamilton Island is seeking an experienced and passionate Restaurant Manager to lead front-of-house operations at qualia, our award-winning luxury resort. This is a unique opportunity for a seasoned hospitality leader with a luxury hotel or resort background to oversee a diverse, multi-venue dining offering and deliver exceptional guest experiences at one of Australia’s most prestigious destinations.

Nestled on the northern tip of Hamilton Island, qualia is home to multiple premium dining experiences, including two hatted restaurants, Pebble Beach and The Long Pavilion, alongside in-room dining and exclusive poolside service. In this role, you will work closely with the Food & Beverage Manager and Executive Chef to lead a sophisticated, multi-outlet operation, delivering seamless, world-class service across all guest touchpoints—from intimate dinners to bespoke events and weddings.

Where you’ll make an impact

  • Overseeing the daily operations of multiple outlets, including two hatted restaurants, in-room dining and poolside service
  • Delivering exceptional, personalised service across a range of luxury dining experiences
  • Managing reservations, guest preferences and bespoke service requests across all venues
  • Leading, mentoring and developing a high-performing front-of-house team across multiple service styles
  • Driving operational excellence through strong coordination with kitchen, stewarding and bar teams
  • Overseeing the planning and execution of exclusive events, private dining and weddings
  • Managing financial performance, including budgets, labour costs, forecasting and stock control
  • Ensuring compliance with brand standards, service protocols, hygiene and operational procedures

What we’re looking for

You’re a confident and experienced hospitality leader with a background in luxury hotels, resorts or multi-venue dining operations. You bring a strategic, hands-on approach and thrive in delivering seamless service across varied outlets while maintaining exceptional attention to detail.

To be successful, you’ll need:

  • Proven experience managing multi-outlet food & beverage operations within a luxury hotel or resort environment
  • Strong background in fine dining, à la carte and premium service styles
  • Demonstrated leadership experience with a focus on team development and performance management
  • Exceptional grooming, presentation and guest engagement skills
  • Strong commercial acumen, including budgeting, cost control and revenue management
  • Advanced problem-solving skills and the ability to perform under pressure
  • Flexibility to work across varied shifts and rosters
  • Minimum 12-month commitment with a desire to grow within the company
  • Proficiency in Microsoft Office
  • Current Driver’s Licence (Essential)
  • RSA Certification (Essential)

Highly regarded:

  • WSET or Sommelier accreditation
  • Experience in a Luxury Lodge, Michelin Star or Hatted restaurant
  • Diploma of Hospitality Management or equivalent
  • Certificate IV in Assessment & Workplace Training or equivalent
  • International luxury hotel or resort experience

Capella Lodge is inviting Expressions of Interest for our upcoming season commencing mid-August.

What you can expect from a day in this role:

As Spa Supervisor, you will work closely with the Spa Manager to support the daily operations of our luxurious spa. In this hands-on role, you'll help lead a team of skilled therapists, ensuring exceptional service standards and a seamless guest experience. Your responsibilities will include coordinating schedules, maintaining treatment quality, overseeing spa presentation and cleanliness, and delivering a range of treatments.

 

What you will bring to the role:

  • A Diploma in Beauty Therapy coupled with proven experience in a luxury spa, lodge, or similar setting
  • Ideally, you’ll also bring experience in a senior therapist or supervisory role to support your leadership skills
  • Strong interpersonal and leadership skills, with the ability to support and motivate a team
  • Excellent attention to detail and a commitment to delivering high standards in both guest service and spa operations
  • Confident in managing day-to-day responsibilities while escalating key issues to the Spa Manager
  • Flexibility to work across a range of shifts, including weekends and holidays
  • Driver’s licence and vehicle are essential

 

We’re seeking a committed team member who can grow with us and remain in the role for at least 12 months. This role suits someone who values stability, consistency, and professional development within a supportive, collaborative environment. Your long-term contribution will help maintain continuity, strengthen relationships, and support exceptional experiences for our guests and team.

Experiences Guide / Porter / Driver

We now require a professional, well-presented, enthusiastic and organised Experiences Guide / Porter to coordinate and host our exceptional activities program, whilst working with guest services as porter / driver as required.

The essential element of this role is delivering the ultimate itinerary for our guests. With a knowledge of and passion for natural history, indigenous culture, flora and fauna, a flair for guest interaction and exceptional presentation and organisational skills, you are integral to the experience of each and every guest.  Interpreting journeys through Uluru-Kata Tjuta National Park is just one of the amazing experiences you play host to.

To succeed in your application you will need:

  • Appropriate tertiary qualifications and or significant experience within the hospitality/resort or eco-tourism industry
  • Significant experience as a naturalist guide
  • Senior First Aid (essential)
  • Full unblemished NT driver's license, ability to obtain H-endorsement (essential)
  • Heavy vehicle license MR/LR a great advantage
  • Detailed knowledge of Australian native flora, fauna and ecology and keen interest in continuous learning
  • Exceptional communication and presentation skills
  • Strong organisational skills with attention to detail
