The Lodge:

Globally celebrated and the winner of multiple, prestigious awards since first opening in 2008, Southern Ocean Lodge on Kangaroo Island now has an opportunity for an Executive Chef to lead the team and culinary offer

Perched atop the clifftops overlooking the Southern Ocean, the lodge combines contemporary design, world-class dining, and an immersive connection with nature.  Join us in celebrating the resilient spirit of Kangaroo Island, its diverse wildlife and its vibrant community.

Southern Ocean Lodge is part of Baillie Lodges - an Australia-based collection of 10 award-winning luxury lodges with properties in four countries and across three continents.

The Role:

Southern Ocean Lodge's food philosophy very naturally, is underpinned by the glorious agricultural abundance – whether it be direct from our modest kitchen garden or local Kangaroo Island farmers.  As Executive Chef, you will curate and develop our daily-changing Dinner tasting menu alongside our elevated breakfast and lunch offer. You will draw not just from the abundance of local produce, but also from your own culinary journey and experiences.

This role requires someone who can effortlessly move between leading the culinary direction of the lodge as well as being a hands-on leader who can support the kitchen team in daily operations.

You will have:

  • Significant experience in kitchen management, ideally in the luxury segment
  • A passion for all things food & beverage, with experience in F&B management
  • A great sense of humour and the ability to instil this approach in your team
  • The willingness to support the kitchen and broader lodge team in day-to-day operations
  • Strong financial management skills and organisational abilities
  • The highest level of attention to detail
  • An entrepreneurial drive and spirit, with a sense of creativity
  • Exceptional interpersonal skills with the ability to communicate with all levels of guests and team members

Commis Chef

Centred around a commitment to deliver a real ‘sense of place’ for guests, the Baillie Lodges’ Culinary Philosophy is essential to the dining experience at Longitude 131°. The menu changes daily with the seasons, providing a constant source of delight to guests.

We are looking for a Commis Chef to join our team to help deliver the Baillie Lodges’ Culinary Philosophy essential to the dining experience at Longitude 131°.

To succeed in your application you will need:

  • Appropriate trade qualifications
  • Proven experience in delivering high quality dining
  • Strong attention to detail and style
  • A passion for innovative food
  • Knowledge of Australian cuisine and Industry Standards
  • Excellent organisational and time management skills
  • Previous experience in a remote lodge or resort would be advantageous

What you can expect from a day in this role: 

As the successful candidate, you will provide quality facials, massages, and body treatments in our luxurious spa. Your role will include delivering expert treatments tailored to each guest's needs and ensuring a personalised, relaxing experience.

 

What you will bring to the role:  

  • A Diploma in Beauty Therapy
  • Previous experience in a Luxury Lodge environment or similar
  • Excellent communication and interpersonal skills
  • Outstanding attention to detail and client care
  • Flexibility and reliability to work across a variety of shifts
  • A vehicle and drivers licence (preferred), or other modes of accessibility to the property

This role is in a beautiful remote Tasmanian location, but still only a two hour drive away from Hobart and Launceston.

Our staff has access to live in subsidised and fully-furnished accommodation in Tasmania’s breathtaking Freycinet National Park which is located only 10 minutes drive from holiday town, Coles Bay.
