‘Wild Tastes of the Top End’ with James Viles

As the Culinary Director at Park Hyatt Sydney and founder of Offgrid Provisions, his menus are deeply connected to the land, gathering inspiration from his travels across Australia including Bamurru Plains.
Over four days, embark on a hands-on experience, foraging and sampling wild bush ingredients from this exotic habitat. Unearth the natural beauty and rich diversity of Bamurru Plains, as a unique Australian Top End food bowl.
‘Wild Tastes of the Top End’ culinary safari includes:
- Four day itinerary hosted by Bamurru Plains and special guest James Viles, including bespoke menus and hands-on culinary experiences
- Three nights’ accommodation in a Safari Bungalow at Bamurru Plains, offering an immersive wildlife stay
