Curated by award-winning Executive Chef Nancy Kinchela, and designed to delight food and wine lovers, each complimentary gourmet experience reflects the culinary philosophy of celebrating the very best of seasonal and regional produce.

Sustainable Seafood
6 July
Josh Niland is one of Australia’s leading chefs known for his unique and ground-breaking approach to showcasing fish, which has gathered him international recognition. For one night only, enjoy an exclusive opportunity to experience Josh’s sustainable approach and appreciation of Australian fish. Alongside Executive Chef Nancy Kinchela, Josh will present a unique dinner for all guests using the whole fish paired with the finest regional ingredients. Each dish will be matched with Delamotte champagnes. Guests will also have the opportunity to personally meet Josh and learn of his craft and passion. Complimentary.

Experience a magical winter wonderland and celebrate the very best of Yulefest.  From crackling bonfires to delicious treats and a traditional Christmas feast, experience an indulgent celebration set against the picturesque backdrop of the magnificent Greater Blue Mountains.

Timboon Whisky Weekend
19 & 20 July
Immerse yourself in the wonderful world of whisky with Josh Walker, head distiller at the award-winning Timboon Railway Shed Distillery in Victoria. Join an exclusive afternoon masterclass, led by Josh, and sample an array of Timboon’s finest small-batch single malt varieties. In the evening, a menu of smoke-infused dishes, prepared over open fire, with each course artfully paired with a Timboon whisky. An evening not to be missed.

1832 Wolgan Gin Weekend
26 & 27 July
Fancy a gin or two? Experience the ultimate weekend of gin indulgence with Ian Glen from the historical Stone Pine Distillery in Bathurst and Sydney’s leading gin specialist, Mikey Enright. Forage botanicals and challenge your cocktail creativity at a Mixologist Masterclass. As the sun sets behind the escarpments, savour the finest regional produce with a gin-inspired degustation dinner in the Wolgan Dining Room.

Will Studd Cheese Masterclass
2 & 3 August
Will Studd has been working with cheese for over 30 years and is an expert on all things curd. Join Will as he presents an insider’s glimpse into the world’s best cheeses, along with a selection of his personal favourites.

Clonakilla Truffle Dinner
16 & 17 August
Join Tim Kirk from the award-winning Clonakilla Winery in Canberra to share his passion for evocative wines. Sample some of the finest Clonakilla vintages with a bespoke wine and cheese tasting led by Tim. In the evening, savour a truffle-inspired degustation dinner accompanied by Clonakilla wines.
