Dairy Flat Farm is Lake House’s own 38 acre regenerative growing facility 10 minutes down the road from Lake House in Daylesford.

A trip to Lake House in Daylesford is an opportunity to explore the quality of the produce and discover the sustainable food networks essential to the makers and producers (and consumers!) of outstanding food. The fertile, agricultural Dairy Flat Farm inspires and provides much that is on the menus, beverage selections and floristry at Lake House.

Lake House guests can experience firsthand where their food is grown, and where their delicious sourdough and viennoiserie is produced. The Bakehouse supports the growers and millers of small local grain economies and in the process, the local community has gained added access to good bread. The mission to supply guests with not only the best, but also with a product whose provenance is always known continues.

So far the property includes five acres of dedicated newly developed vegetable gardens, a working barn for future classes and workshops, 3 hoop houses, a glass house; an orchard of 300 trees; an existing rejuvenated olive grove and a similarly attended to two and a half acre vineyard are now up and flourishing.

As a result they now have their own pristine and freshly picked produce going into the Lake House kitchens on a daily basis.

Dairy Flat by Lake House has not forgotten their local community of growers and farmers, some of whom they’ve forged relationships with over decades. You’ll still find them noted throughout their menus when you dine. But they have always had to supplement what they have been able to provide. Dairy Flat Farm Daylesford will now serve that purpose, as well as allowing them to experiment with rare and interesting varietals for their menus. They also have their eye on the opportunity to do far more preserving and fermentation with excess produce. An extensive cellaring space on The Farm will be stocked soon enough we’re sure.
